Dandelion Pie

So this ginormous dandelion was kind of annoying me. I kept meaning to pull it, and then forgetting, and then noticing it again... until it became a giant monster.



Today I just couldn't take it anymore.


So I yanked it.


And I blanched it.


Added some fresh mint, oregano, cheeses, onion and egg...


And I ate it.

Hey, you're still welcome to plant those little tomato and green pepper seedlings, too. Can you tell I'm not quite into gardening? LOL

I planted like five of them in the front bed, but I think the rest are probably ready for composting at this point... their growth has been a little stunted by all of this rain! :-/

But never fear - we picked up a bunch of larger ones recently which I've planted in back, so hopefully we'll have some veggie-bounty this year after all!

Dandelion pie, that's awesome. I really want to do something like this to help my kids see that all this stuff is edible and valuable.
